I have a confession to make… I LOVE pesto. I don’t think I can blame my Italian genes on that. A lot of people love pesto and for good reason.
Genoa, Italy is the birth home of pesto. Traditionally it consists of basil, garlic, pine nuts, a grated cheese like parmigiana reggiano and olive oil. Blended together into a delicious sauce.
You can use it on pasta, rice, eggs, fish, poultry, and meats. You can mix it into dips or use it as a spread on a sandwich. It’s incredibly versatile.
For me, traditional pesto will always be a favorite. But sometimes you just want to try something different, or perhaps you don’t have enough basil to make a batch.
